Between increased instances of diet restrictions to lifestyle choices, food has taken on many new faces. Having dietary restrictions shouldn’t mean giving up all the foods you love. This banana avocado bread, while vegan, paleo-friendly, and gluten-free, aims to bring you a little slice of nourishment while maintaining a strict food regimen.

The key factor in eating paleo is that foods like this banana bread shouldn’t be an everyday snack. We made this recipe to really be a special treat that you can share with vegan friends over brunch or even dessert.

Bananas brings in a lot of the moisture that vegan food might normally lack without the inclusion of butter and eggs. They also add a lot of the sweetness that paleo foods miss without sugar. We bumped the sweetness up a little with the inclusion of dates and brought in even more moisture to combat the grittiness of almond flour with the healthy, fat-filled delight that is avocados.

Once smashed and the rest of the wet ingredients mixed together, add your dry mixture to the big bowl. Stir until thoroughly incorporated. Add the apple cider vinegar last, as it gets a chance to react with the baking soda in the mixture. This adds lift to your bread.

Since we are using almond flour, don’t be sad if the middle of your loaf falls slightly after removal from the oven. This is normal and even with the slight bit of coconut flour we add, you’ll see a little droop. It’s okay though! Because your banana avocado bread will still be delicious, dense, and nutritious.

    Bananas, mashed
  • 2

    Avocados, mashed
  • 1/2

    Avocado Oil

    Flax Seeds
  • 1/3

    Dates, finely chopped

    Pure Vanilla Extract
  • 2

    Baking Soda
  • 2

    Cream of tartar
  • 1

    Cinnamon

    Apple Cider Vinegar

Instructions

  1. Preheat oven to 350°F. Line a 9x5 inch loaf pan with parchment paper.

    Mix flax seeds and warm water together and set aside until it reaches a gelatinous texture. 

    Combine remaining dry ingredients whisk thoroughly and set aside.  

    Mash bananas and avocados until barely any clumps. Add avocado oil, dates, flax seed mixture, and vanilla extract. Mix thoroughly. Combine dry ingredients and mix well. Add apple cider vinegar. 

    Pour mixture into loaf pan and bake for 50-60 minutes until toothpick inserted into center comes out clean. Allow to cool completely in the pan resting on a wire rack, then remove with the help of the parchment paper.
