Channeling Bob’s Burgers with the “Don’t You Four Cheddar ‘Bout Me” Cheeseburger

There isn’t a television show currently in syndication that resonates with me more than Bob’s Burgers. And that has a lot to do with my love of cheeseburger.

Naturally, when National Cheeseburger Day came on our food calendar, I had to recreate one of Bob’s amazing burger puns. So today I bring you the “Don’t You Four Cheddar ‘Bout Me” from Season 3, Episode 14 “Lindapendent Woman”.

The premise of this burger is to use four different kinds of cheddar cheese (and yeah, that’s a lot of cheese). I used sharp cheddar, mild cheddar, sharp white cheddar, and an aged Irish Cheddar. 

First, I made a sauce using the White Cheddar. Make a classic roux, add milk and cheese, and let sit on warm on the stove. Next, I made what I like to call Sharp Cheddar Hats. It’s shredded cheese baked until they resemble crispy crackers. The other two cheeses will be on top of and inside the burger patty.

Next, we’ll need to prepare the patties. And what better tool than the Endurance® Burger Press! Especially when you’re making a burger that’s Juicy Lucy style and stuffed with cheese.

Lay the burger meat down on some waxed paper and flatten it out to about 1/8 inch thick. Place the medium cheddar slices folded into quarters in the center.

Lay another 1/8 inch thick slab of ground beef over the top of that.

Press down with the burger press, centering over where the cheese slices were placed.

You’ll end up with perfectly uniform 1/4 lb patties! Pop them out by pushing on the button at the top of the press. Salt and pepper both sides of the patties and they are ready for cooking!

For this recipe, we decided to pop them on the grill, because fire is just so pretty. However, you can also cook them indoors on your favorite cast iron pan. Cook them to your liking of doneness, just know if you go rare, the cheese on the inside may not be as melty as you like it.

And don’t forget to top with a cheese as well! We chose a 2-year aged Irish Cheddar (bless you, Kerrygold).

Next, assemble your burger! Everyone has their own preferences, of course. I like an entire slice of onion on mine because I like to scare people away from talking to me; but, you know, you choose what you want. Just don’t forget the cheese sauce on the top and bottom of the bun and the Sharp Cheddar Hat!

the recipe: “Don’t You Four CHeddar ‘Bout Me” Cheeseburger


4 slices Mild Cheddar cheese
7 ounces 2-year Aged Irish Cheddar
3/4 cup shredded Sharp Cheddar cheese
1 cup shredded White Cheddar cheese
1/2 cup milk
2 tbs butter
2 tbs flour
Sprinkle of smoked paprika (optional)
1.5 lbs Ground Beef, 80/20 grade
Salt and Pepper to taste
Buns of your choosing
Toppings of your choosing


For the White Cheddar Sauce: Using a small sauce pan, melt butter over medium heat. Add flour and cook down to a golden roux. Add milk and whisk until roux has dissolved. Next, add shredded white cheddar cheese and stir until completely melted. Add smoked paprika (optional). Leave on low heat.

For the Sharp Cheddar Hats: Preheat oven to 375°F. Lay parchment paper on a baking sheet, then sprinkle the Sharp shredded cheddar in small circular mounds. You should have enough cheese for four “hats”. Bake for 15-20 minutes, or until center is crispy.

For the patties: Take 80/20 grade ground beef and lay out on waxed paper. Flatten until meat is 1/8 inch thick. Place cheese in “center” of patty. Place another 1/8 inch thick slab of ground beef on top. Cut out patties with burger press. Salt and pepper both sides and grill to liking.

Assemble cheeseburgers as you please! For added goodness, make sure to toast your buns.
