Harissa Meatballs with Tahini & Mint Yogurt Sauce

08.29.18 - BY Nona Raybern

Middle Eastern cooking is always plentiful with spice and flavor. One of the traditional street foods, Kofta (or Kefta), is all about the spice and ground meat. Today we take our inspiration from this dish in creating these Harissa meatballs.

So what exactly is harissa? The hunt for a good harissa spice paste isn’t an easy one. You’ll likely find this spice in specialty stores, like Trader Joe’s or Whole Foods or at your local international market. Harissa comes in many forms, but normally it’s a blend of spicy chiles mixed with oils and a handful of spices like cumin, coriander, garlic, and sometimes even rose petal. Using lamb as our main meat, these harissa meatballs make a fragrant and wonderfully warm dinner.

If you’re creating a dish with a lot of fresh herbs, you don’t want to spend the entire time chopping and mincing. The Endurance® Herb Scissors will make quick work of your herbs.

The key to making any good meatball really comes from the uniformity of the balls. This keeps cooking times even with just the right amount of moist to crisp ratio. So what should you use? A cookie scoop! While we normally use the Endurance® Spring Release Scoop for delicious and doughy cookies, today we use it to create perfectly round meatballs.
