Better Than Take-Out Keto Burrito Bowl with Miracle Cilantro Lime Rice

Okay. The Keto Burrito Bowl. This recipe is EASY. So easy. Maybe too easy?!

Nothing can actually be too easy, especially in today’s hectic world. But when the takeout receipts start piling up a little too high, look towards making some good and nutritious recipes at home.

This keto burrito bowl recipe has a great assortment of nutrients and can be customized. The best part of a burrito bowl, though, is obviously the rice. So what to do when the keto lifestyle doesn’t allow rice?

Miracle Rice, friends. This bizarre faux rice derives from the Japanese konjac plant. It has a texture similar to tapioca, but not mushy at all. A little chewy, but with little flavor on its own so as not to distract from the gorgeous ingredients in your burrito bowl. It also cooks up in just less than 5 minutes, which is really the miracle. One of the most important tools you need to make it, though, is a great mesh colander. For this version, we chose a well marbled skirt steak. You can choose any cut of meat in this bowl. You can opt for chicken, pork (mmm, carnitas), or go completely veggie with it! But we love a good steak, especially one cooked up on the grill. We used the Endurance® BBQ Locking Tongs to make sure we gripped and turned our meat firmly.

You know how we said under 20 minutes? That’s only if you buy your pico de gallo or salsa pre-made. Because let’s be honest, the most time consuming part of cooking is often the food prep: chopping, dicing, slicing, marinating, etc. We made our own pico de gallo this go around because it is so dang easy and made even easier with the Garlic Press. We believe in putting ALL THE GARLIC in the pico.

Keto Burrito Bowl with Miracle Cilantro Lime Rice

For the Steak

  • Skirt steak
    or your choice of meat
  • 1
    Sea salt
  • 1
    Black pepper
  • 1

Cilantro Lime Miracle Rice

  • 2
    Bags of Miracle Rice
  • 1
    Lime, juiced
  • 1/4

Toppings of Choice

  • 1
    Romaine lettuce
    thinly chopped
  • Canned corn
  • Black beans
  • Pico do gallo
  • Avocado
  • Green pepper
    finely diced
  • Full fat sour cream
  • Full fat cotija cheese
  • Cilantro
  • Limes


For the Steak

  1. Let steak come to room temperature (skip this step if you are opting for chicken or poultry). Pat dry. Mix together spices in a small bowl and rub onto the steak. For fastest results, cook steak on grill to taste (medium to medium rare for best results). Allow to rest at least 5 minutes before cutting. Once rested, cut steak against the grain and serve. 

For the Miracle Rice

  1. Cook miracle rice according to package instructions. Add lime juice and cilantro, cook for an additional minute. Drain in mesh colander. 

To Assemble the Bowls

  1. Place miracle rice in first. Add whatever toppings you like, then top with steak. Add full fat cheese and sour cream if you wanna.
