Bring on the Pink with this Beet and Rhubarb Vegan Gin Fizz!

Vegan cocktails. Why would you need to specify a cocktail as vegan? Classic cocktails like Sours and Fizzes feature egg whites, so if you live that vegan life those aren’t great choices. Luckily, Aquafaba is an excellent egg white substitute and we created this gorgeous pink Vegan Gin Fizz.

What’s Aquafaba?

What exactly is Aquafaba? It’s the water that you drain from a can of garbanzo/chickpea beans. It doesn’t work with any other beans, just garbanzo and chick peas. The starchy liquid works as an excellent binder, but one of its more amazing uses is as an egg white substitute. Whether in cocktails or meringues, aquafaba replaces egg whites with incredible ease. And, to be honest, it makes a better cocktail.

Will it taste weird using bean juice though? Not at all. Aquafaba easily carries the tastes of whatever your recipe contains.

Our recipe for a Beet & Rhubarb Vegan Gin Fizz works perfectly for Valentine’s Day, Galentine’s Day, or as a delightful summertime cocktail. The beet simple syrup make this cocktail a stunning bright pink, while the rhubarb bitters balances out the sweetness and brings a nice tart flavor.

Of course, we used a few staple products from RSVP’s Endurance® Barware line to create this recipe. Included: Endurance® Cocktail Shaker, Endurance® Classic Cocktail Strainer, Endurance® Double-sided Jigger, Endurance® Conical Strainer, and the Endurance® Stainless Steel Straws to elevate your sipping.

The recipe itself comes together quite simply. To make the beet simple syrup, take two beets, chop them, and boil in 1-1/2 cups of water. Strain and add 1 cup of sugar, let cool.

To make the Vegan Gin Fizz cocktail, drain the aquafaba into a container. Measure and pour into the cocktail shaker. Remove the spring from the cocktail strainer and stick it into the cocktail shaker. Shake vigorously until the aquafaba starts to foam. Remove the spring and place it back onto the strainer. Add the remaining ingredients (minus the soda water!), add ice, and shake vigorously again for at least one minute. Strain the cocktail through the conical strainer into a tall glass. Top with soda water gently, so the foam rises. Then, enjoy!

To be honest, we enjoyed the aquafaba version of the gin fizz more than the traditional egg white version. The aquafaba seemed to cream up better and create a more dense foam.

A good gin fizz doesn't need egg whites! This Vegan Gin Fizz features the use of aquafaba and a lovely beet simple syrup with rhubarb bitters for a perfectly pink cocktail.

For Beet Simple Syrup

    Medium red beets
    Peeled and medium dice
  • 1 1/2
    Cup

    boiling

    White sugar

For the Vegan Gin Fizz

  • 1

  • 2

  • 1

    Beet simple syrup
  • 3
    Dashes
    Rhubarb bitters
  • 1/2
    Lemon
    juiced
  • Soda water to top
  • Green as garnish

Instructions

For Beet Simple Syrup

  1. Take two beets, peel and medium dice. Boil in 1-1/2 cups of water. Strain and add 1 cup of sugar to beet water mixture. Let cool completely. 

For the Beet & Rhubarb Vegan Gin Fizz

  1. Drain the aquafaba into a container. Measure and pour into the cocktail shaker. Remove the spring from the cocktail strainer and stick it into the cocktail shaker. Shake vigorously until the aquafaba starts to foam. Remove the spring and place it back onto the strainer. 

  2. Add the remaining ingredients (minus the soda water!), add ice, and shake vigorously again for at least one minute. Strain the cocktail through the conical strainer into a tall glass. Top with soda water gently, so the foam rises.
