Banana Avocado Bread

The sweet trifecta of vegan, gluten-free, and paleo makes this banana avocado bread one of the most all-inclusive treats you can eat.

Ingredients

  • 2 Cups Almond Flour
  • 1/2 Cup Coconut Flour
  • 2 Large Bananas mashed
  • 1 Large Avocado mashed
  • 1/2 Cup Avocado Oil
  • 2 Tbs Flax Seeds
  • 1/3 Cup Warm Water
  • 1 Cup Dates, finely chopped
  • 1 Tsp Pure Vanilla Extract
  • 2 Tsp Baking Soda
  • 2 Tsp Cream of tartar
  • 1 Tsp Cinnamon
  • 1/4 Cup Apple Cider Vinegar

Instructions

  1. Preheat oven to 350°F. Line a 9x5 inch loaf pan with parchment paper.

  2. Mix flax seeds and warm water together and set aside until it reaches a gelatinous texture. 

  3. Combine remaining dry ingredients. Whisk thoroughly and set aside.  

  4. Mash bananas and avocados until barely any clumps. Add avocado oil, dates, flax seed mixture, and vanilla extract. Mix thoroughly. Combine dry ingredients and mix well. Add apple cider vinegar. 

  5. Pour mixture into loaf pan and bake for 50-60 minutes until toothpick inserted into center comes out clean. Allow to cool completely in the pan resting on a wire rack, then remove with the help of the parchment paper.
