A good gin fizz doesn't need egg whites! This Vegan Gin Fizz features the use of aquafaba and a lovely beet simple syrup with rhubarb bitters for a perfectly pink cocktail.
Take two beets, peel and medium dice. Boil in 1-1/2 cups of water. Strain and add 1 cup of sugar to beet water mixture. Let cool completely.
Drain the aquafaba into a container. Measure and pour into the cocktail shaker. Remove the spring from the cocktail strainer and stick it into the cocktail shaker. Shake vigorously until the aquafaba starts to foam. Remove the spring and place it back onto the strainer.
Add the remaining ingredients (minus the soda water!), add ice, and shake vigorously again for at least one minute. Strain the cocktail through the conical strainer into a tall glass. Top with soda water gently, so the foam rises.
