Bacon & Blue Cheese Hasselback Potato

  • 6 Large Russet potatoes hasselbacked
  • 10 oz Blue Cheese
  • 1 package Bacon cooked medium
  • 1 stick Salted butter melted
  • Salt to taste


  1. Preheat oven to 400°F.

  2. Cover large baking sheet in foil and lay bacon out. Cook bacon for 10 minutes and lay out on paper towels. Cut into 1 inch x 1 inch pieces

  3. Wash and dry the potatoes, scrubbing off any dirt.

  4. Hasselback the potatoes using the Hasselback potato guide.

  5. Place in baking dish and pour melted butter over potatoes, making sure potato is completely covered.

  6. Bake for one hour.

  7. Remove from oven and alternate between potato layers bacon and blue cheese.

  8. Place back into oven and bake an additional 15-20 minutes.

  9. Top with more blue cheese and chives. Serve hot.
