This Winter egg white cocktail is the perfect treat for a low key gathering of close friends. Smooth, creamy, herbaceous, and a little bubbly.
Bring water to a boil. Add Rosemary sprigs. Reduce heat and simmer for 5 minutes, to fully infuse flavor. Add sugar and stir until completely dissolved. Remove from heat and strain.
Place egg white into cocktail shaker, along with the straining spring from a cocktail strainer. Close with lid or pint glass and shake vigorously for 2 minutes, until egg white is fluffy and resembles whipped cream. Remove straining spring, rinse, and reattach to strainer. Add ice, gin, lemon juice, rosemary syrup, and cranberry jelly to shaker. Replace lid and shake vigorously for 1 minutes.
Double strain using cocktail strainer and small fine mesh conical strainer into coupe or collins glass. Top with soda water. Garnish with fresh cranberries and rosemary. Serve immediately.
